Under the culinary direction of Botanist Executive Chef Hector Laguna, Fairmont Pacific Rim will celebrate its 10-year anniversary with a special one-night-only evening of culinary art, music and surprise.
On Wednesday, March 11, Botanist will host a celebratory 10-course evening of culinary artistry. The 10-course dining experience will explore the bounty of the Pacific Northwest with each dish served small enough to get your taste buds riled up for more. The evening will feature a special musical performance and guests can expect to indulge in elevated and innovative dishes, such as northern divine caviar and black truffle.
